Cuvée Prestige - Ca' Del Bosco represents the pinnacle of Franciacorta's sparkling wine art. This extraordinary Extra Brut sparkling wine is the result of a skilful blend of three varieties of grapes: Chardonnay (79.5%), Pinot Bianco (1.5%) and Pinot Noir (19.0%), coming from selected and carefully cultivated vineyards in the municipalities of Erbusco, Adro, Cazzago San Martino, Corte Franca, Iseo and Passirano for the Chardonnay; Passirano for Pinot Bianco and Erbusco, Provaglio d'Iseo and Passirano for Pinot Noir.

The grapes used in Cuvée Prestige come from vineyards with an average age of 27, 30 and 20 years respectively, ensuring consistent quality and a depth of flavor that only mature vines can offer. The 2021 vintage was particularly challenging, characterized by extreme climatic conditions, but which still led to grapes of excellent analytical balance thanks to careful management of the vineyards and careful selection of the grapes.

The winemaking follows the rigorous Ca' del Bosco Method, which includes manual harvesting of the grapes in small boxes, followed by a meticulous selection and an innovative system of washing and hydromassage of the grapes. This process ensures maximum purity of the grapes before pressing in the absence of oxygen, preserving the aromatic and gustatory integrity of the musts. Fermentation takes place in thermo-conditioned steel tanks, where the base wines mature until the following March.

The creation of the cuvée is a magical process that combines 76% of the wines from the 2021 harvest with 21% of reserve wines from 2020 and 3% reserve wines from 2019. This blend is aged on the yeasts for an average period of 25 months , developing a unique complexity and richness of flavours. Dégorgement takes place in the absence of oxygen, thanks to a system patented by Ca' del Bosco, which minimizes oxidation and the addition of sulphites, guaranteeing extraordinary purity to the final product.

The result is a Franciacorta Extra Brut of exceptional quality, with a fine and persistent perlage, elegant aromas of ripe fruit, floral notes and a light toasting. On the palate, the Cuvée Prestige offers a perfect balance between freshness, structure and complexity, with a pleasant mineral persistence.
