Shrimp Risotto and other recipes with Sauvignon Blanc

Here are five recipes where Sauvignon Blanc is not just a pairing, but becomes the star in cooking, enhancing flavors and aromas.

1. Risotto with Sauvignon Blanc and Shrimp

For a preparation for 4 people, you need:

  • Carnaroli rice (320 gr.)
  • Fresh shrimp (300 gr.)
  • White onion (1 small)
  • Sauvignon Blanc (150 ml)
  • Hot vegetable broth (1 liter)

Preparation

  1. Prepare the vegetable broth first
  2. Also prepare the shrimp, after cleaning them – you can briefly sear them to keep their almost raw flavor, or cook them well, depending on your taste
  3. In a non-stick pan, sauté the onion in extra virgin olive oil and toast the rice without burning it
  4. Deglaze with Sauvignon Blanc until evaporated
  5. Continue cooking the rice, adding broth one ladle at a time
  6. Halfway through cooking, add the shrimp you prepared
  7. Finish cooking and stir in a knob of butter and a sprinkle of parsley.

2. Spaghetti with clams and Sauvignon Blanc

Main ingredients for 4 people

  • Spaghetti (400-500 gr.)
  • Vongole veraci (1 kg)
  • Garlic (2 cloves)
  • Fresh chili pepper (1 small piece)
  • Sauvignon Blanc (100 ml)

Preparation

  1. Prepare the clams after washing them well: put them in a covered pan and cook over medium heat until they open; strain the cooking water and set everything aside
  2. In another pan, large enough to hold the spaghetti, heat oil, garlic, and chili pepper – remember to remove the garlic clove when it has browned
  3. Put the clams in the pan and deglaze everything with half of the Sauvignon, then let it warm over low heat (or turn off the heat)
  4. Cook the spaghetti al dente in a tall pot
  5. When the spaghetti are ready, drain them and add them to the clams in the pan, bringing the temperature back to medium-high to deglaze everything with the second part of the Sauvignon
  6. Adjust salt, stir in butter, finish with chopped parsley and a drizzle of raw oil. Ready to serve! Remember to bring the bottle of Sauvignon too!

3. Chicken with Sauvignon Blanc and aromatic herbs

For 4 people, you need as many boneless chicken thighs, 200 ml of Sauvignon Blanc, 1 clove of garlic, sage, thyme, and rosemary preferably fresh, and extra virgin olive oil. Preparation takes about 30 minutes:

  1. Brown the chicken well with oil, garlic, and herbs
  2. Deglaze generously with Sauvignon Blanc
  3. Cover and cook over medium heat for 25 minutes, basting with the wine
  4. Discover, raise the heat to dry the sauce and give a slight crispiness
  5. Paired sides: roasted potatoes or grilled vegetables

4. Fish soup with Sauvignon Blanc

Great to enjoy both in summer and winter! We offer you a simple and nutritious version, you can add or change the fish as you like! Portion for 4:

  • Cod and salmon fillets (400 gr total)
  • Cleaned mussels and clams (600 gr)
  • Peeled tomatoes (400 gr)
  • Onion, celery, and carrot
  • Sauvignon Blanc (150 ml)

Preparation

  1. Prepare the shellfish – mussels and clams – after washing them well: put them in a covered pan and cook over medium heat until they open; strain the cooking water and set everything aside
  2. Chop the vegetables and sauté in oil
  3. Add the peeled tomatoes and cook for 10 minutes
  4. Add the fish fillets and deglaze with Sauvignon Blanc
  5. Towards the end of cooking, add the shellfish covering everything with a lid.
  6. Season with parsley and serve with toasted bread croutons

You can keep the soup thicker or more liquid, depending on taste, by adjusting the cooking of the tomatoes.

5. Pears with Sauvignon Blanc and spices (dessert)

Main ingredients

  • Kaiser pears (4)
  • Brown sugar (80 g)
  • Cinnamon stick (1)
  • Cloves (2)
  • Sauvignon Blanc (250 ml)

Preparation

  1. Peel and core the pears
  2. In a pan, put the wine, sugar, and spices and bring to a boil
  3. Immerse the pears and cook over low heat for 20 minutes, turning them occasionally
  4. Remove the pears and set them aside
  5. Reduce the liquid until it becomes syrupy
  6. Serve the pears drizzled with syrup

A scoop of vanilla ice cream completes the dish – for the greediest, a bit of cream too!
