Harvest: Between mid-August and early September when the grapes have reached the correct sugar maturation, but still retain notable acidity and freshness
Maturation: Over 40 months from the harvest, of which at least 30 months on the yeasts.
ORGANOLEPTIC CHARACTERISTICS
Color: Straw yellow with golden reflections.
Aroma: Intense and harmonious, with notes of citrus and elegant tropical fruit.
Flavor: Enveloping in its nuances, elegant and persistent structure, hazelnuts in the aftertaste.
Perlage: Fine and persistent, soft, delicate and creamy foam.
Pairings: Ideal as an aperitif, it goes well with delicate fish and shellfish appetizers
Serving temperature: 7° – 8° C.
