Description

Obtained from the white vinification of whole bunch Ciliegiolo grapes. The wine has a pink color with delicate but intense aromas, on the nose citrus notes of pink grapefruit, slightly spicy, with a truly pleasant minerality.
It is obtained from 100% Ciliegiolo grapes coming from two vineyards planted in San Gemini, the first in Colle Ozio, the other in Colle Pizzuto. The land is located at 230-290 meters above sea level. and are of medium-textured clay-limestone type. The vineyards are between 5 and 10 years old, trained using the Guyot system with a yield of between 700 and 800 grams per plant.
The grapes are harvested manually in 20 kg boxes.
Fermentation is spontaneous and lasts about 20 days. After racking, the 05035 Ciliegiolo Rosato ages in stainless steel on its fine deposits at a controlled temperature for approximately 6 months. After bottling the wine remains to rest in our cellars for another 1/2 months. The annual production varies from 3000/3300 bottles.
