Description
Pecorino is an indigenous Abruzzo variety rediscovered a few years ago thanks to the recovery and selection work of a few bold winemakers. It prefers fertile soils with high water availability. The wine is characterized by strong citrus notes and freshness in the mouth accompanied by the right body and tasting persistence.
Production Area: The Pecorino - Pasetti vineyards are located in the municipality of Pescosansonesco at 550 m above sea level. and in the municipality of Capestrano at 450 m above sea level, both within the Gran Sasso and Monti della Laga National Park.
Pecorino is produced 100% with Pecorino grapes, with a density of 5200 vines/ha and a yield of 120 q/ha. The harvest takes place mechanically in the first ten days of September.
Vinified off-white, through soft pressing and subsequent static decantation. Fermentation takes place in steel with selected yeasts at 14-16 °C.
After fermentation, the white wine of Abruzzo Pecorino - Pasetti is aged for 2 months in steel and another 2 months in the bottle. To be stored at 16-18 °C and consumed preferably within 3 years of harvest.
Pecorino - Pasetti has a bright straw yellow colour, with hints of yellow pulp fruit and citrus notes. In the mouth it stands out for its acidulous vein and flavor which are balanced with excellent structure, persistence and softness.
Perfect for pairing with raw fish, cured meats, plain lasagna, risottos, poultry and medium-aged cheeses.
