The Salice Salentino DOC Riserva - Paolo Leo represents an authentic expression of the winemaking tradition of Salento. Made mainly from Negroamaro grapes (85%), enriched with small percentages of other native Apulian vines, this wine celebrates the roots of a unique territory. Its long maturation, with 12 months in French oak barriques, 6 months in large barrels and 4 months in steel, gives the product a extraordinary complexity and impeccable harmony.
The color is a fascinating ruby red with garnet reflections, a prelude to an intense sensorial experience. The nose releases elegant aromas of fruit jam, such as plums and berries, accompanied by refined spicy notes of black pepper, licorice and anise. The grapes come from Puglia saplings over 50 years old, grown on clayey soils in the evocative countryside between Brindisi and Lecce, in the Salice Salentino area. The vinification involves a long maceration and fermentation at a controlled temperature to maximize the peculiarities of Negroamaro.
