Harvest:manual in boxes in the first ten days of Octoberwhen the maturation process is in its initial phase.
Vinification:maceration for approximately5-6days and vinification at a controlled temperature in stainless steel.
Maturation:in natural volcanic tuff caves, in French oak carats or tonneaux, for a period of at least 12 months.
