After racking, malolactic fermentation is encouraged and the wines are transferred to wood of various capacities, essences and origins: 20-25 hl capacity barrels, 500 liter barrels and finally 225 liter barriques.
The wine has a purplish ruby red color of good intensity and density, and a spicy aroma of dried figs, morello cherry and aromatic herbs. On the palate, it has a good persistence, with elegant sweet tannins and a pleasant velvety balsamic tone, balanced in the aftertaste with great enveloping and pleasantness. Maturation takes place over a period of 25 months, during which regular decanting, cellar care and blending are carried out to give the wine a balanced roundness of tannins.
