Sapiens Cesanese Del Piglio Docg by Federici is an elegant and distinctive red wine, produced 100% with Cesanese di Affile grapes coming from the hills of Anagni and Paliano, in the province of Frosinone . The vines grow at an altitude of 450 meters above sea level, on clayey soils which give the wine a unique structure and complexity.
Winemaking occurs through destemming and pressing of the grapes, followed by fermentation with maceration of the skins. After aging for 4 months in steel, the wine has an intense red color that tends towards garnet with aging.
On the nose, floral notes and berries emerge which anticipate a soft and enveloping taste in the mouth. Its slight bitterness is perfectly balanced with a full and warm body, supported by rightly present tannins and a harmonious finish of great balance.
Sapiens Cesanese Del Piglio Docg is the ideal accompaniment for seasoned cured meats, first courses with meat sauces, beef and mutton, lamb hunter style and in general with traditional Roman cuisine.
