Description

The grapes used for the production of this wine are carefully selected and placed in small plastic crates of approximately 5-6 kg, to then be transferred to special drying rooms, where the conditions will be carefully monitored. of humidity. Here the grapes rest for about 3 months, during which there is a 30% drop in the weight of the wet part, but a great concentration of all the essential components of the berry.

The winemaking takes place in stainless steel tanks at a controlled temperature, with a maceration period of approximately 20-30 days, during which punching down and delestage operations are carried out. After racking, malolactic fermentation is encouraged and the wines are transferred to wood of various capacities, essences and origins: 20-25 hl capacity barrels, 500 liter barrels and finally 225 liter barriques.

The wine has a purplish ruby ​​red color of good intensity and density, and a spicy aroma of dried figs, morello cherry and aromatic herbs. On the palate, it has a good persistence, with elegant sweet tannins and a pleasant velvety balsamic tone, balanced in the aftertaste with great enveloping and pleasantness. Maturation takes place over a period of 25 months, during which regular decanting, cellar care and blending are carried out to give the wine a balanced roundness of tannins.

This Amarone pairs perfectly with game dishes of all types, stews, grilled red meats and long-matured cheeses, even slightly spicy ones. Ideal for elegant dinners in the company of friends or family, its balance and roundness of tannins make it a wine with great charm and personality.
