Description
The name "Capitel della Crosara" derives from the ancient capital present in the small village of Valpolicella, depicting the figure of the Madonna, which was used as a strong-willed icon by the farmers of the area. In the 1950s, the Montresor family fell in love with the area and established a collaboration with the peasant families of the village to purchase their grapes, thus obtaining a monopoly on them.
This wine is obtained from the blend of Corvina, Rondinella and Molinara grapes, typical of the Valpolicella area.
The vineyards of this wine are located in the heart of Valpolicella, in a strategic position that best expresses the beauty and richness of the terroir.
The method used for the production of this wine is the "Ripasso Method", a technique which involves the refermentation of the Amarone pomace on fresh Valpolicella grapes. After the harvest, the grapes undergo traditional vinification with destemming and maceration of the skins, with slow fermentation. Subsequently, refermentation takes place on the Amarone pomace, followed by aging in wood for approximately one year.
Valpolicella Ripasso DOP - Capitel della Crosara - Montresor has an intense ruby red colour. On the nose, notes of candied fruit, spices and vanilla are perceived. On the palate, a dry, warm and delicately bitter flavor is appreciated, with hints of violet, liquorice and ripe blackberry.
Valpolicella Ripasso DOP goes perfectly with first and second courses of land, game and game dishes, as well as with international meat-based cuisine. It is an ideal wine to enjoy for a special dinner or to celebrate an important moment.
