The Salice Salentino DOC Riserva - Paolo Leo represents an authentic expression of the winemaking tradition of Salento. Made mainly from Negroamaro grapes (85%), enriched with small percentages of other native Apulian vines, this wine celebrates the roots of a unique territory. Its long maturation, with 12 months in French oak barriques, 6 months in large barrels and 4 months in steel, gives the product a extraordinary complexity and impeccable harmony.

The color is a fascinating ruby red with garnet reflections, a prelude to an intense sensorial experience. The nose releases elegant aromas of fruit jam, such as plums and berries, accompanied by refined spicy notes of black pepper, licorice and anise. On the palate it is round and enveloping, with velvety tannins and a persistent, warm and decisive finish. A wine that expresses power and balance in every sip.

The grapes come from Puglia saplings over 50 years old, grown on clayey soils in the evocative countryside between Brindisi and Lecce, in the Salice Salentino area. The manual harvest, carried out at dawn and with extreme care, preserves the integrity of the bunches, guaranteeing excellent quality. The vinification involves a long maceration and fermentation at a controlled temperature to maximize the peculiarities of Negroamaro.

Ideal to be served at 18°C in large glasses, Salice Salentino DOC Riserva pairs perfectly with flambéed meats, long-cooked stews, or structured dishes based on game. It is the ideal companion for an intimate evening in front of the fireplace or for a refined dinner with friends and family.

Puglia

Paolo Leo

Paolo Leo, born in 1960, comes from a family where producing wine was an inevitable legacy; the founder began vinifying his grapes at the Masseria Monticello in the early 1900s, and then it was his son Paolo Leo who inherited the land and built the winery in the village.

And today it is still an heir, the namesake Paolo Leo, Nicola's son, who leads the new winery, together with his wife Roberta and his sons Nicola, Stefano, Francesco and Alessandro.
