Description

The name "Mater Matuta" derives from the ancient Italic deity, goddess of the dawn, protector of nascent life and fertility.
The cult of this divinity was widespread in Central Italy and the famous temple of the ancient city of "Satricum", near Le Ferriere (Latina), was dedicated to her.


GRAPES AND VINIFICATION

Syrah (85%) and Petit Verdot (15%)*.
The grapes for both varieties are harvested in an excellent state of ripeness, sometimes light withering for the Syrah.
The vinification foresees different techniques for the two vines.
Syrah ferments with indigenous yeasts according to the submerged cap technique for a period of 18-20 days, during which periodic "délestage" occurs, especially in the initial stages.
Syrah thus gives the Mater Matuta complexity and character, with sweet tannins and intense aromas of morello cherry and spices.
For the Petit Verdot, on the other hand, the vinification takes place through the use of fullers that allow maximum extraction of tannins and polyphenolic substances.
The result is a Petit Verdot with a great body and structure that lends itself well to long aging.
After careful racking, where the handling of the pomace takes place only by gravity, the wines are placed separately in new barriques for 22-24 months.
This is followed by a further refinement of 10-12 months in the bottle.

ORGANOLEPTIC EXAMINATION

Dark ruby, very dense; balsamic hints stand out on the nose, then dark coffee beans, violets and ripe cherries.
Finally, a strong spiciness of coriander, nutmeg and cinnamon emerges.
Mouth that envelops and seduces thanks to a perfect tannic texture and a well-integrated freshness.
Fruity and persistent finish.


SUGGESTED COMBINATIONS

100% Buffalo milk provolone, aged by the company for 4-5 months in its own fresh Syrah pomace.

Casale del Giglio was founded in 1967 by Dr. Berardino Santarelli, originally from Amatrice, and is located in the Agro Pontino in the locality of Le Ferriere, Municipality of Aprilia, in the province of Latina, about 50 km south of Rome.

This territory represented, compared to other areas of Lazio and other regions of Italy, an environment to be explored from the point of view of wine.
For this reason, the “Casale del Giglio” research and development project was launched in 1985, authorized by the Agriculture Department of the Lazio Region.
