VINES Chardonnay - Sangiovese - Malvasia - Rondinella
VINIFICATION The grapes are harvested in the first ten days of September. Immediate soft pressing for the white berried grapes while the percentage of red grapes used for the production of the sparkling wine rests for a few hours in maceration. After assembly, the manufacturing process of the classic method follows.
REFINING Approximately 12 months from the harvest.
TASTING NOTES Vista: Soft foam with fine and persistent perlage.
Color: Powder pink with more intense shades.
Perfume: The bouquet is clear, fresh with pleasant notes of currant, wild strawberries and dog rose.
Taste: Pleasantly harmonious and elegant with good sapidity in closing, it maintains excellent fragrance and freshness.
PAIRINGS Aperitifs also with oysters, seafood plateaus and sushi.
