Description of the wine: Barolo DOCG Ginestra Casa Matè by Elio Grasso is a highly prestigious red wine, produced with Nebbiolo grapes grown sustainably in the Piedmont region. The nose opens with a complex and enveloping bouquet of red fruits and spicy notes, followed by hints of leather, tobacco and wet earth. On the palate it is firm and structured, with elegant tannins and a lively acidity that enhances its freshness. Its persistence in the mouth is remarkable, leaving an indelible memory. Barolo DOCG Ginestra Casa Matè by Elio Grasso is a wine of great elegance and personality, which best represents the territory in which it is produced and the commitment of a family in the production of high quality wines.
The vinification of Barolo Ginestra Casa Matè involves alcoholic fermentation in stainless steel tanks at a controlled temperature, with daily pumping over. Once the malolactic fermentation has taken place, the wine is refined in 25 hectoliter Slavonian oak barrels. After bottling, normally in August, the Barolo Ginestra Casa Matè rests in the cellar for 8-10 months before being marketed.
