The Chianti DOCG BIO "PURO" by Fattoria Lavacchio is a natural wine of the highest quality, coming from the historic Chianti region, where winemaking tradition blends with sustainable innovation. This wine, 100% Sangiovese, is an authentic and genuine expression of the territory, worked without the addition of sulphites and with careful organic vinification.
The grapes for the Chianti DOCG BIO "PURO" come from vineyards located to the south, in an ideal position that favors optimal sun exposure for the ripening of the bunches. The harvest takes place manually, in boxes, at the end of September, when the grapes are perfectly ripe and ready for vinification which reflects the organic philosophy of the company.
The vinification of "PURO" is distinguished by the utmost respect for the quality of the grapes. After delicate destemming, the grapes are fermented and macerated in steel at a controlled temperature for approximately 8 days. This process allows the primary characteristics of the grapes to be preserved, giving the wine a fresh and fruity aromatic profile. Malolactic fermentation occurs quickly, thanks to the absence of sulphites, and the wine is then decanted and kept at 10°C to ensure good stability. Maturation in steel for around six months helps to keep the freshness of the wine intact, enhancing its liveliness and fruity notes.
