Regolo Valpolicella Ripasso Superiore DOC - Sartori is a very high quality red wine from the Veneto region, known for its longevity and unique aroma. Obtained through a scrupulous selection of the grapes in the vineyard, a delicate crushing-destemming and fermentation at a controlled temperature for 8-10 days, the subsequent "repass" on the Amarone pomace during the month of February gives this wine a distinctive characteristic.

During this second fermentation, the extraction of tannins which ensure the longevity of this wine and the extraction of the typical aromas of Amarone is promoted. After malolactic fermentation, the wine is aged for approximately 18-24 months in medium and large barrels, and then rests for at least 6 months in the bottle. The final result is a bright garnet red wine, with an intense and persistent aroma, a dry and velvety flavor with a hint of cherry, a robust and harmonious body.
