Description

Merlot Omina Romana is a red wine of classic and refined elegance, obtained from the cultivation of four clones of Merlot on soils of different composition and gradation of clayey loam. Each clone is harvested and vinified separately based on their respective maturation times, guaranteeing complexity and polyphenolic richness.

Harvest and Vinification of Omina Romana Merlot

The harvest of the individual Merlot clones takes place manually with sorting of the bunch, followed by destemming and very light pressing. The must thus obtained undergoes a cold pre-fermentation maceration for approximately 48 hours. Fermentation takes place in stainless steel tanks at a controlled temperature, with subsequent maceration on the skins for 10-15 days. After malolactic fermentation, which takes place in oak barrels, the wine matures for approximately 12 months in second passage French oak barriques, with bâtonnage, and then proceeds with the assembly of the individual clones. Finally, the wine ages in the bottle for at least 12 months.
