Description
Dedicated to the Roman god Janus, who with his two faces watches over every beginning and every end. In the same way with scrupulousness in the vineyard and patient waiting in the cellar, this wine gives elegance, strength and pleasantness from start to finish. The grapes coming from the company's most suitable vineyards and the careful selection of the bunches make this wine one of the highest qualitative expressions of ÔMINA ROMANA.
Harvest and Vinification: The different varieties are harvested at organoleptic ripeness and vinified separately. The harvest is manual, with selection of the bunch, destemming and sorting of the grapes. The grapes thus selected undergo cold pre-fermentation maceration for approximately 48 hours. Fermentation takes place partly in stainless steel tanks and partly in truncated cone-shaped wooden vats at a controlled temperature, with consequent maceration on the skins for 10-15 days. The malolactic fermentation, carried out in oak barrels, is followed by a maturation period of approximately 18-22 months in first passage French oak barriques, carrying out bâtonnage. After blending the individual varieties, it ages in the bottle for at least 18 months.
