Description

 The vineyard is located in the locality of the same name on a west-facing slope, with
 partly north-south and partly east-west orientation.
 The blend is 85% Cabernet Sauvignon and the remaining Sangiovese and Ciliegiolo. 
The planting layout, 3x1 m, allows for optimal vegetative development of the vines,
 canceling the shading on the rows. 
The Borgonovo is pruned with spurred cordon and in the summer they are made
 manual defoliation to improve the composition of the grapes. 
The Borgonovo vineyard, like the others, is totally grassed and managed organically.
 

After harvesting, the grapes undergo fermentation: the skins macerate in the must
 until this uses up all the sugars, after which the Borgonovo wine rests for two
 years in large wooden barrels and another year aged in the bottle

La Casa dei Cini

La Casa dei Cini, an organic farm founded in 2005 by Clelia and Riccardo Cini, specialized agronomists, is located in the hills of Valnestore. The Cini family, present in the area since 1700, has a long agricultural tradition, developed over generations.

Today the company produces wine and oil, but has diversified with products such as lavender, raspberries, and garlic. Since 2017 it has focused on the recovery of the native Dolciame vine, cultivated in collaboration with the University of Perugia. The labels are customized thanks to the collaboration with the cartoonist Sualzo.
