Description

The vineyards that give life to this prized Pinot Grigio are located in the "Girlan" sub-area, nestled in the Oltradige hills, at an altitude between 450 and 500 meters above sea level. These vineyards enjoy excellent air exchange and grow on soils rich in minerals, derived from the sediments of the glacial age.

The grapes are harvested by hand, with particular care, in small boxes to preserve their integrity until they are transported to the cellar. After delicate pressing, the must undergoes a natural decantation to separate the impurities. Fermentation takes place at a controlled temperature in stainless steel vats, followed by a period of refinement on the fine yeasts in stainless steel tanks.

Pinot Grigio is characterized by small bunches, with berries of a rust color tending towards brownish. It is not uncommon to find Pinot Bianco and Grigio grapes on the same vine, both belonging to the renowned Pinot family of Burgundy. Its taste is characterized by a delicate softness which makes it perfect in combination with dishes based on asparagus, fish and delicate meats.
